I don´t know if either are true – I like both stories, almost as much as I enjoy making and eating Gambas al Pil Pil. If you can get hold of good prawns (or shrimp) then this is a very easy yet impressive dish to serve to your guests.

Heat the oil in a frying pan over a medium high heat. Add garlic and chilli and cook for about 1 minute, stirring, until the garlic just starts to brown but not burn. Add the prawns, season, add sprinkling of paprika and cook, stirring continuously, for a further 2 to 3 minutes, or until they turn pink and are just cooked through.

Serve into pre-heated Heat a cast iron or skillet pan to a high temperature, add 2 teaspoons of olive oil, sweat off the sliced garlic, chillies and chorizo for four to five minutes, add the smoked paprika and roast red pepper and cook for a further two minutes, then add the rest of the oil to simmer for five minutes. Peel the prawns and put into the terracotta dish. Season with a little salt. Add the paprika, garlic and parsley. Pour enough oil to just cover the prawns and stir well.
